Gluten-Free Coconut Pancakes
One of the main thins I miss due my strategy of eating low carb high fat and 99% gluten-free are pancakes ! The fluffy texture with small crispy brown spots, the butter, the syrup, the taste; all these things combine to make for one tasty treat.
Now, the downside....the gluten and carbs. Personally, if I devour a stack of "real" pancakes, made with glutinous flour, even if freshly ground or whole grain.....I get stiff joints, itchy scalp, red face and general malaise. Now I did this for a few decades before realizing the err in my ways.
I love pancakes however so this is a major GS.....what? GS.....our silly slang for "goat screw" used properly like....."what a goat screw" pretty ridiculous I know...but funny to a few of us ! Back to pancakes.....
I have tried most gluten-free flour recipes with all manner of things like tapioca starch, rice starch, bean flour, etc. Talk about a goat screw!! Gummy, sticky, slimy.....these are not proper descriptors for my favorite stack of griddle cakes.....! NOPA !
We do have access to another strange "flour-like" substance called coconut flour. It will bid up liquids such as beaten eggs, milk, coconut milk, melted butter etc. to created a pancake of sorts.
Now this pancake will be different then the typical flour based stack....and lack some of the texture we crave....however they are super low carb and gluten-free, so I'm ok with it.
I have been messing around with coconut pancake recipes awhile and finally have one I like. This makes me very happy....!
