This Thai sweet chili vinaigrette is perfect in any Thai style salad, on lemongrass chicken and other famous Thai dishes such as Pad Thai. Thai sweet chili sauce is the base of this recipe. Thai Sweet chili sauce is perfect for use on spring rolls, egg rolls, grilled shrimp, Thai or Chinese fried rice, fried chicken and much more.
Sweet Chili Vinaigrette
In Thai cuisine sweet chili sauce is often used as a dipping sauce or accompaniment. Thai bird chili peppers are typically used to provide the heat in sweet chili sauce, however just about any hot pepper will work. In this recipe a prepared sweet chili sauce is used as the base, more experienced cooks can make their own chili sauce for this or opt for simplicity and use the prepared stuff.
Ingredients
- 1/2 cup plus 1 tbs sweet chili sauce
- juice of one lime
- 1 tsp Dijon mustard
- large handful of fresh cilantro
- 2 garlic cloves
- 4 green onions
- 1/4 c rice wine vinegar
- 1 tbs soy sauce
- couple drops of fish sauce
- 3/4 cup grapeseed oil
- 1/4 c extra virgin olive oil
- kosher salt to taste
Instructions
- In a stand blender or mason jar using an immersion blender, add all ingredients except oil and salt., whiz it up until well combined.
- Slowly drizzle in the oil with a blender or with an immersion blender running until the vinaigrette is emulsified.
- Adjust seasoning with salt if needed.
