Stuffed Zucchini
One of my favorite childhood recipes, stuffed zucchini updated a tad. Mom made a similar dish every summer using our garden-fresh NJ zucchini
Ingredients
- 2 large zucchini, steamed for 15 minutes or so….don’t let them get as soft as they appear in the video!
- 2 tbs bacon fat (optional) you can use olive oil or butter too
- 1/2 cup minced onion
- 2 garlic cloves minced
- 3 slices bacon cooked, diced up
- 1/2 cup good quality parmesan cheese
- 1/4 cup roasted red pepper, diced
Instructions
- In a skillet over medium-high heat add bacon fat, onions, and garlic. Saute for 2-3 minutes. Add diced-up zucchini from the inside of the zucchini. Season with salt & pepper.
- Add the roasted peppers and continue to saute’ for another 2 minutes.
- Season the inside of the zucchini shells with salt & pepper, then stuff the filling in it. cover with the parmesan cheese. Bake for 25 minutes in a 350-degree oven.
