Stretching Mozzarella Cheese
Recently we sourced some local, grass-fed Jersey cow raw cheese curd. The color was a butterscotch yellow....these cows are on green Florida pasture year around. Now this curd was NOT cheap. However, the flavor is buttery, clean and wonderful tasting.

Stretching begins..its a balance between jeeping curds hot enough to stretch and burning your hands in the near boiling water..
Finished cheese.. 2/5 pounds or fresh mozzarella........And then we made.....
This amazing pizza...cheese was perfectly salted, very stretchy and totally delicious.
