What's Up ?  I wanted to share the details about a new dish I am going nto be placing into Food Storage Feast, a simple but tasty Indian spiced rice dish. It features basmati nad a ton of aromatics...you'll find this to be simple but really, really good.

372-Indian Spiced Rice-Food Storage Feast

Ingredients

  • 4 tbs olive oil

  • 4 green onion

  • 1/4 c minced white onion

  • 4 garlic cloves

  • 1/2 cup diced roasted red pepeprs

  • 1/4 c roasted red peper juice

  • 1 tsp cumin

  • 1/2 tsp corriander

  • 1 tsp minced ginger

  • large handful minced cilantro

  • 2 cups basmati rice

  • 4 cups water

  • 2 tbs butter

  • salt and pepper to taste

  • 1 c peas, frozen

Instructions

  1. Combine rice, water, butter, bring to boil, then lower to simmer, cover, cook 22 minutes. After 17 minutes, drop peas on top, cover and continue cooking.

  2. Meanwhile, in sauce pan add oil, onions and garlic, cook 10 minutes, add ginger and spices, cook 4 minutes.

  3. Add peppers and juice, cook 2 minutes, turn off heat, add cilantro, mix well. Allow to cool.

  4. When rice is done, flake it with a fork, then add 4 cups to the sauce pan, mix well, serve rice warm or room temp.

  5. Goes very well with grilled chicken or fish.
