370-Cuban Roast Pork w Mojo Flavors

On today's episode of the Cuban Food series we discuss making a Cuban style Pork Roast, this is a very easy dish that produces magical results. Perfectly seasoned pork perfect for slicing and making a Cuban sandwich, which will be covered in an upcoming episode. Ingredients

2 tbs smoked paprika 1/4 cup olive oil large bunch cilantro 1 tbs dry oregano 10 garlic cloves juice and zest of one orange 1 tbs cumin, ground juice and zest of 1 lime 1 tsp black pepper, ground 1 tbs kosher salt 5 lb pork shoulder, with fat back attached, pierced 100 times with tip if sharp knife all over.

Method

In a food processor add first 10 ingredients, process until smooth. Place pork in a large bowl, pour over processed mixture, massage well into pork. Cover, let sit overnight in fridge. Then bring out to counter, let sit 3 hours at room temp. Preheat over to 275, place pork into a baking dish fat side up, cook 3-5 hours or until internal temp reads 165. Remove, let rest, slice and serve with yellow rice and black beans. Make perfect Cuban sandwiches.
