Lemongrass Beef
This Lemongrass beef produces such an amazing experience I had to share it with you all. The accompaniments make the dish so be sure to round these up as well.
Ingredients:
- 3 stalks lemongrass
- 7 cloves garlic
- 3 green onions
- 5 tbs grape seed or safflower oil
- 2 tbs gluten free soy sauce
- 2 tbs fish sauce
- juice of one lime, fresh !!
- 1 tbs coconut palm sugar
- 2 lbs of meat: use shoulder flap, skirt, or flank

Method:
- Chop up lemongrass into small pieces, then place into food processor along with green onions and garlic. Pulse processor to break up lemongrass into fine pieces.
- Add 2 tbs of the oil, lime juice, sugar, soy and fish sauce, and process to a smooth paste,
- Slice up beef into thin strips against the grain, place in large work bowl, dump contents of food processor over beef, mix well and let marinate at least 2 hours at room temperature.
- Now cook the beef....In a large pot with sides add remaining oil, heat to medium, then cook beef in batches trying to attain a deep caramel brown color.
Serve beef with the following garnish/accompaniments:
- Sliced cucumber
- Mung bean sprouts
- Lettuce cups...bibb or romaine works well
- cilantro
- lime wedges
- ground peanuts
- Sambal ground chili sauce
- Sweet chili sauce
- chipped green onion
