Sweet Chili Sauce
This simple sauce is easy to make at home with all-natural ingredients, the store-bought varieties are pretty lousy and contain many questionable ingredients IMO. This is a well-balanced sauce and perfect for many Thai dishes.
Sweet Chili Sauce
This simple sweet chili sauce is made with all-natural ingredients and simple non-GMO sugar. It's spicy and sweet and perfect for all your Thai or Chinese dishes.
Ingredients
- 165 grams Fresno peppers
- 450 grams bell peppers
- f65 grams of fermented chili sauce
- 40 grams shallots
- 20 grams garlic
- 45 grams of rice wine vinegar
- 15 grams of fish sauce
- 200 grams sugar
- 550 grams water
- 10 grams salt
- 2 tbs of potato starch
- 2 tbs of water
- juice of 1 small lime
Instructions
- Coarsely chop peppers and garlic and shallots, add to bowl of food processor.
- Pulse vegetables until a small mince is achieved, but avoid making a puree.
- Add all vegetables to a pot over medium heat, add half the water, salt, and rice vinegar, and bring to a boil.
- Add the balance of water and sugar, bring back to a boil, and cook for 5 minutes.
- Add lime juice and fish sauce.
- Add 2 tbs water to 2 tbs of potato starch, mix well, and dump into the sauce.
- Stor sauce until everything is well combined, it should be at a rapid boil, and turn off the heat.
- Add to heatproof jars or bottles, and store in the back of the refrigerator for as long s 5 or 6 months.
