Veloute is another simple Mother Sauce that has so many useful variations you must know how to construct this sauce.
- 5 tbs butter
- 4 tbs all purpose flour
- 4 cups broth, either chicken, fish or veal
- kosher salt to taste
- white pepper to taste
- In a sauce pot over medium low heat melt butter then add flour and cook for 1 minute.
- Add stock a 1/4 cup at a time and whisk until all stock in incorporated.
- Add salt and pepper, cook stirring often with a whisk until sauce coats the back of a spoon.
