Description:
Mahi-Mahi has great flavor and texture as well as being high on the sustainable fish list. Served with the delicious combination of beans and greens, it’s sure to impress even the meat-eaters in your family.
Ingredients:

2 lbs Mahi-Mahi
3 tbs extra virgin olive oil
salt and pepper to taste
2 heads escarole rough chopped
4 cloves garlic chopped
2 cups low sodium chicken broth
1 tbs crushed red pepper
1/4 cup shallots chopped
Directions:
1. In a large pan heat the oil over medium, add the garlic, shallot and pepper flakes. Cook this for a few minutes and then add the escarole, beans and broth. Season to taste.
2. Next lightly oil and season the Mahi and place it on a hot grill for about 4 minutes on each side. Remove from grill, place atop the beans and greens and serve.
Chef’s Notes: As always, when grilling fish, place it on a hot, clean and lubricated grill, the nleave it be, it should not be flipped more than once.[/private]
