Apple Crepes

Apple Crepes

Make these delicious crepes during the bounty of the apple harvest, usually early fall. I eat hundreds of apples during the harvest, cooked in many excellent dishes, like this one!

Pretty easy apple crepes with brandy

Recipe type: dessert
Ingredients
  • 1 stick butter
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon fresh grated nutmeg
  • 1cup walnut pieces
  • 3 Gold Rush or Granny Smith apples, cored and sliced ¼-inch thick
  • (optional)1/4 to ½ cup Apple Jack Brandy, or any other apple liquor or brandy
  • (optional)8 scoops cinnamon or vanilla ice cream
  • 8 crepes(essentially, very thin sweetened pancakes)
  • 2 ounces crumbled Blue cheese
Method
  1. In a saute pan, melt the butter. Stir in the brown sugar, cinnamon, and nutmeg. Cook the mixture for 1 minute to dissolve the sugar. Add the walnuts and apples.
  2. Cook the apples for 3 to 4 minutes, or until the apples are tender and caramelized. Remove the pan from the heat and add the brandy.(keep your face out of the way!) Place the pan back on the stove. Shake the pan a couple of times to ignite the flame. If the flame does not ignite, carefully light the flame with a match.
  3. Spread a scoop of the ice cream evenly over each crepe. Starting with one side, gently roll the crepe up like a jellyroll. Place the crepes in the freezer and freeze until firm, about 1 hour. Divide the crepes between four shallow bowls. Spoon the apple/walnut mixture over the crepes. Sprinkle the cheese over the top and serve immediately.

Mojo Chicken

Description:

Mojo Marinade is simple and easy to make. There are as many recipes for this dish as there are islands in the Caribbean. It incorporates garlic, citrus juice and soy sauce to make a wonderfully bright flavor hot off the grill. So in the grilling season don’t forget your Mojo.

Ingredients:

2 lbs chicken breast boneless/skinless
4 medium limes juice
2 zest oranges plus juice
4 cloves garlic chopped
1/4 cup brown sugar
1/4 cup cilantro chopped
1/4 cup soy sauce

Directions:

1 .Combine all ingredients and add chicken.
2. Marinate unrefrigerated for at least 30 minutes and up to 1 hour.
3. Remove chicken from marinade.
4. Grill chicken over medium heat about 5 minutes on each size depending on the size of chicken breasts.
5. Chicken will become very dark in the cooking process due to the high sugarcontent.
6. Adjust grill heat to prevent over caramelizing.
7 .Marinade can be used up to 3 times. [/private]

Heart Healthy Hawaiian Chicken

Description:

Sweet and salty flavors go perfectly together and how easy it is to pair ham and pineapple with flavors of ginger and basil. At the center of the dish, Free Range Chicken will pair very well with this taste explosion.

Ingredients:

2 lbs chicken breast pounded 1/2 thick
salt and pepper to taste
3 cloves garlic chopped
1 medium pineapple diced
6 ounces smoked ham diced
2 cups low sodium chicken broth
2 tbs fresh basil chopped
2 whole green onion sliced
3 tbs soy sauce
1 tbs ginger chopped
1 tbs brown sugar

Directions:

1. Season the chicken with salt and pepper. Sauté them in olive oil in a large pan over medium high heat for about 5 minutes on each side.
2. Remove the chicken and allow them to rest. In the same pan sauté the shallots, ginger and garlic and cook for about 2 minutes while stirring on medium high.
3. Now add the brown sugar, ham, pineapple, green onion, chicken stock and soy.
4. Cook the sauce for about five minutes, add basil, and place the chicken back in to the sauce. Season to taste and serve.
