A very easy and tasty shrimp recipe. The addition of healthy spinach and olives makes this recipe even better.
Ingredients:
1 tsp extra virgin olive oil
3-4 garlic cloves, minced
1/2 c fresh parsley, chopped
2 tsp dry oregano
1 (14-oz) can organic plum tomatoes, drained and coarsely chopped
1/4 tsp freshly ground black pepper
8-12 oz chicken broth (pacific brand or your home made)
1 1/4 lb large shrimp, peeled and deveined (buy American shrimp, not imported!!)
8 oz angel hair pasta
1/4 c kalamata olives, chopped
2-3 c baby spinach
1 c crumbled feta cheese
2 tbsp fresh lemon juice
Directions:
1. Heat oil in a large saucepan over medium heat. Add garlic, sauté 30 seconds. Add 1/4 cup parsley, oregano, and tomatoes, pepper, and chicken broth. Reduce heat, and simmer 10 minutes, season to taste.
2. Add shrimp and cook for 3 minutes. Add spinach and olives and stir, and continue to cook 2-3 minutes.
3. Meanwhile, cook pasta until al dente. Just before serving add lemon juice and feta cheese. Serve over pasta. Garnish with remaining parsley.
