This is a simple green salsa recipe that brings the flavor of the grill or broiler to the dish. I make this salsa each summer and even water bath can it to store for the winter. This is fabulous on scrambled eggs or in burritos.

Yield: 1 qrt.
Roasted Tomatillo salsa recipe
3 lbs tomatillos, husked and rinsed well
1 lb ripe plum tomatoes
1 large white onion, peeled
2 large jalepeno peppers
3 tbs pure olive oil
juice of two limes
3 garlic cloves
1 large bunch of cilantro
salt and pepper to taste
Method:
1-In a large bowl toss tomatillos, onion, peppers, garlic in a few tablespoons of oil, add salt and pepper, toss to coat with oil. Lay on a sheet pan that has been covered with foil. Roast, broil or even grill to give these items a good blackeningโฆ.
2-Toss into food processor and pulse a few times to reach desired consistency.
3-Add chopped cilantro, lime juice and re-season with salt and pepper.
Chef’s Note: If you do not have a food processor..just use your chef’s knife! Or even a regular blender…
