This recipe shows you how to brine fish and from here on you be doing it to all of your fish, it’s that good.
2 1/2 lbs salmon
1 cup brown sugar
1/3 cup Kosher salt
2 qts water
4 tbs dill chopped
2 tbs tarragon chopped
1 1/4 cup olive oil
1 recipe smoked tomato cream sauce
Preheat grill to medium high.
1. To make the brine, place the water, brown sugar, salt, dill and tarragon in a large pan stir to combine and add the salmon. Let the salmon marinate for one hour.
2. Remove the salmon from the brine and pat dry. Brush the fillets with olive oil and place on a clean hot grill.
3. Turning the salmon only once allow to cook for 10 minutes.
4. Remove from heat and allow to rest for 5 minutes. Top with sauce and serve.
