Description:
This simple but elegant dish focus on flavorful ingredients. Sea bass is so delicious it is being illegally fished and so we need to know the source of the fish we are buying. Talk to your fish monger about where it comes from and learn more.
Ingredients:
2 1/2 lbs Chilean sea bass
6 sprigs thyme
3 cloves garlic cut in half
1 whole lemon zest
3 whole green onion cut in 1 inch pieces
3 tbs butter melted
Salt and pepper to taste
Directions:
1. Place the fish skin-side down on a piece of foil. Giving enough space so as not to touch one another.
2. Season with salt and pepper. Top each fillet with a half garlic clove, thyme sprig, lemon zest and 2-3 pieces of green onion. You can allow this to marinate for a few hours in the refrigerator or place the foil pan on the grill immediately.
3. Drizzle the fish with the butter and grill over a medium hot grill for about 15 minutes depending on the thickness of the fish.
4. Plate and serve immediately[/private]
