Description:
Smoky roasted peppers stuffed with a mixture of savory chicken and earthy black beans, your going to love it!
Ingredients:
2 lbs chicken breast poached and shredded
1 cup white rice cooked
2 tbs jalapeno diced
1 cup white onion chopped
1/4 cup cilantro chopped
1 tbs garlic chopped
3 tbs lime juice fresh squeezed
2 tbs extra virgin olive oil
1 tbs black pepper
1 cup black beans cooked
6 large poblano peppers roasted and peeled
1 recipe enchilada sauce
Directions:
1. Combine the chicken, rice, jalapeno, onion, cilantro, garlic, black beans, black pepper, lime juice and olive oil in a bowl.
2. Stuff the peppers with the chicken mixture and bake in the oven for 30 minutes.
3. Top with the sauce and serve.
