A delicious spin on classic pesto where the pine nuts are replaced by walnuts which are high in omega 3’s. Lovely walnut flavor and an improvement over pine nuts.
Ingredients:
1 bunch fresh basil (large handful or 2 cups packed)
4 tbs freshly grated Parmigiana Reggiano cheese (no green cans!!)
1/4 cup fresh shelled walnuts
1 garlic clove
kosher salt & black pepper to taste(taste first…cheese has salt)
3/4 cup extra virgin olive oil (spend your money..cheap oil will ruin this recipe!)
Directions:
1. Add the first 3 ingredients to food processor.
2. Slowly drizzle in olive oil.
Re-season if needed with salt and pepper
SHAZZAM you got pesto!
Chef’s Note: Use on pasta, in soup, on crisp bread, on grilled fish etc…
Please…do buy good oil, cheap supermarket olive oil will give terrible results. It’s all about the oil.
