One of my favorite childhood recipes, stuffed zucchini updated a tad. Mom made a similar dish every summer.

Description
This zucchini recipe is easy to make and has bacon, cheese and roasted red peppers. Stuffed zucchini recipes are helpful to have when summer gardens are full of this wonderful vegetable.
Ingredients
2 large zucchini, steamed for 15 minutes or so….don’t let them get as soft as they appear in the video!
2 tbs bacon fat (optional) you can use olive oil or butter too
1/2 cup minced onion
2 garlic cloves minced
3 slices bacon cooked, diced up
1/2 cup good quality parmesan cheese
1/4 cup roasted red pepper, diced
Method
1-In a skillet over medium-high heat add bacon fat, onions and garlic. Saute for 2-3 minutes. Add diced up zucchini from the inside of the zucchini. Season with salt & pepper.
2-Add the roasted peppers and continue to saute’ for another 2 minutes.
3- Season the inside of the zucchini shells with salt & pepper, then stuff the filling in it. cover with the parmesan cheese. Bake for 25 minutes in a 350 degree oven.
