Here is a perfect example of using plants in place of meat and having better results. This recipe used diced mushrooms to mimic the meaty chewy flavor of, well, meat. And it’s better then meat version IMO.
The key is to cut the mushrooms in a way that allowd them to stay meaty…IE in small dice..not sliced or run thru the food processor which beats them up to a pulp.
This is a hearty chili with a smoky flavor, a ton of depth and a meaty texture thanks to the beans and the mushrooms.
I used 1 lbs (yes i weighed them) diced as per video and 1 lb of beans plus 5 cups of liquid, basically a veggie stock. these cooked for 2.5 hours to become tender. I used the oven….but, you can use the stove top as well.
We ate this while we watched the Super Bowl…pretty much the only sporting event we watch together. We’re not huge tv watchers…!
