002 harvest eating show notes

Tomatillo salsa recipe

3 lbs tomatillos
1 lb rip plum tomatoes
1 large white onion
2 large jalepeno peppers
juice of two limes
3 garlic cloves
1 large bunch of cilantro
salt and pepper to taste

Method:

In a large bowl toss tomatillos, onion, peppers, garlic in a few tablespoons of oil, add salt and pepper, toss to coat with oil. Lay on a sheet pan that has been covered with foil. Roast, broil or grill to give these items a good blackening….

Toss into food processor and pulse a few times to reach desired consistency.

Add chopped cilantro, lime juice and re-season with salt and pepper.

Strawberry Jam

6 cups of strawberries that have been smashed with a potato masher or run thru a food mill. Measure strawberries AFTER breaking them down.
8 cups super fine sugar
1 packet pectin
2 tablespoons lemon juice
pinch of kosher salt

Method:

In a stainless or enamled cast iron pot add berries, sugar, salt and lemon juice…bring to boil, reduce heat to simmer and cook for 45 minutes, stir often to make sure sugar is dissolved. Add pectin, stir well and continue cooking.
When it starts to thicken considerably your ready to process it into canning jars per instructions of the canning jar company.

Day 2 At Sea, Alaska Cruise

It’s day two at sea, we are about 5 miles off the coast.
Here are some shots from our balcony of the nearby coastline..I believe it’s British Columbia Canada…not actually Alaska yet.
Either way, it’s very scenic…hard to hold the camera still as the ship is rocking allot. Several cruise veterans we’ve asked said this is fairly rough so far, not Deadliest Catch mind you..but no rowboat on Golden Pond either.

I am using a Canon EOS Rebel xli for those of you that give a hoot.

1st Day at Sea on Holland America Cruise

Hello all,

As I write I am at sea on the ms Rotterdam of Holland America Line, a large cruise ship. I can see the mountains of the coast of SE Alaska out the stateroom balcony..snow capped and really majestic.

I help my first of 3 cooking demonstrations this morning at 11 am. Even though the seas are calm, meaning no white caps, there are pretty big rolling swells. Boat is rocking along quite hard. Was interesting doing the demo in their amazing show kitchen theatre while the boat rocked….was a tad seasick.

Have met some very nice people and they are very enthusiastic about Harvest Eating. During the demo I decided to auction off a signed cookbook to the highest bidder….we got $37 dollars and the proceeds go to the breast cancer research.

Today is “formal” day so in a little bit Sonja and I will be off to dine on some Alaska crab legs in the large restaurant aboard. We are having a great time and even though we it’s nice to have a break from our kids…we still miss them very much.
We get to Juneau tomorrow by lunch time and will spend the day looking at the town and some of the glaciers near by. I hope to post some great photos tomorrow night…..that is all for now.

Holland America Cruise

I leave this saturday May 15 on a cruise departing Seattle WA en route to Alaska. Should be a great time. I will be conducting 2 45 minute cooking demonstrations and one 90 minute in-depth class.

I will feature local Alaska wild caught seafood in all three events. I look forward to meeting people on-board and I will be passing out delicious new Kashi bars to them as well.

I hope I do not get sea sick..never been at sea!

We recently started recording audio podcasts to share what’s going on with Harvest Eating. We look forward to pumping these out and feel it’s going to be a great way to stay in touch, motivate, educate and inspire you.

We will try to have guests from time to time once we learn how to include them in the podcast…not that hard..but a tad technical and we need to figure it out and possible buy some equipment.
