Seasonal cooking is not a difficult concept. It does take some discipline to avoid foods that are not in season and to be prepared for the crops that come into season for a few short months each year. By planning on having recipes available beforehand you’ll be able to enjoy these seasonal foods with new and exciting preparation methods so your family does not get board. we focus on these crops each year and then build meals around them.
I could start with any of these; dark leafy greens, artichokes, cherries, asparagus, tomatoes, zucchini, squash, eggplants, corn, butternut squash, pumpkin, apples etc. I take these items that are locally available and fresh then build the meal around them. I add ingredients and pantry staples, including dairy, protein in the form of beef, chicken, pork, fish etc. and then I have created a new dish. Many of the recipes are vegetarian or vegan as well which allows people that cannot or do not want protein in the form of animal products, to participate.
The key here is using fresh local produce and going on from there. This is what Harvest Eating is all about!
