Salmon has received some good press, as a fish that contains many of the nutrients our bodies need. So since it’s good for you and so delicious make it part of your cooking arsenal.
The flavors of the sweet tomato play nicely with the salty capers and the unique flavors of the salmon. So try this tonight.
2 lbs wild salmon
4 tbs extra virgin olive oil
3 tbs capers
5 large plum tomatoes diced
2 tbs basil chopped
3 medium shallot chopped
2 cloves garlic chopped
1. Lightly oil and season the fish. Heat a nonstick pan to medium high and place the fish in the pan flesh side down.
2. Allow the fish to cook for about 5-6 minutes on the first side and another 1-2 minutes on the other. Depending on the thickness of the fish of course. NOTE: A grill pan can be used for this step.
3. Remove the fish from the pan and set it aside to rest covered.
4. In the same pan using the remaining oil, cook the garlic and shallots for 2 minutes. Add the tomatoes, capers and basil. Cook for about 1 minute, season to taste, pour over the salmon and then serve.
Chef’s Notes: Other kinds of tomatoes can be substituted for the plum variety, use whatever you have in the garden.[/private]
