A simple preparation for sweet potatoes that makes their taste shine. A touch of local honey, tangerine juice and butter is all this simple dish needs.
2 sweet potatoes, peeled, cubed and steamed until tender
2 pats organic butter
1 tsp local honey
juice of 1/2 tangerine
salt & pepper to taste
1. Place steamed sweet potatoes in a bowl, add the rest of the ingredients and mash until they are smooth.
Chef’s Note: These potatoes are great in a burrito with jerk chicken, black beans and good fresh goat cheese!!!
