Split Pea Soup with Smoked Ham

Description:

Try this wonderful soup made with organic peas and nitrite free ham. A comfort food classic this soup is really great on a cold evening with a grilled cheese sandwich and tossed salad. This reminds me of my childhood.

Ingredients:

1 medium carrot large diced
1 cup onion large diced
2 tbs olive oil
2 cups split peas rinced and drained
4 cups chicken broth
2 cups ham diced
1 tsp dried oregano
3 tbs fresh thyme in a sache bag

Directions:

1. Begin in a large pot at on that will hold at least two quarts. place the
olive oil, onions and carrot and sweat them over medium low heat until
tender; About ten minutes.
2. Add the peas at this time and allow them to be mixed thoroughly with the
vegetables and oil.
3. Now add the sache of thyme, broth, ham and oregano and cook covered over
medium low heat for thirty minutes or until the peas are soft.
4. Allow to rest for about a half an hour for the flavors to develop.
