This artichoke soup is easy to make, very satisfying and nice to serve at dinner parties. Chef Keith Snow demonstrates how to make this simple soup in this short cooking video.

1 pound canned artichoke hearts
1 medium diced shallots
2 whole garlic cloves
1-1/2 tbs extra virgin olive oil
4 cups organic chicken stock
1/2 cup organic heavy cream
1 pinch salt
1 pinch black pepper
1. In a heavy pot add oil over medium heat, add shallots and garlic then saute for 2 minutes.
2. Add artichokes, chicken stock and cream, bring to a slow boil.
3. Season with salt and pepper, blend until smooth.
Chef’s Note: Soup can be served chunky too. Great with crisp bread and a touch of lemon juice.
