A delicious Mussels dish featuring the flavors of coconut milk, red curry paste, lime and cilantro. A simple dish that takes under 30 minutes and is the perfect party food or appetizer.
1 lb cultivated mussels, cleaned & de-bearded
2/4 cup full fat organic coconut milk
1 large garlic clove, minced
1 large bunch of cleaned cilantro, chopped
1 lime, juiced
1 tsp prepared red curry paste
2 tsp extra virgin olive oil
kosher salt to taste
1-Heat oil over medium fire in a large covered saute pan or even sauce pot, add chopped garlic, sweat for 1 minute.
2- Add coconut milk, curry, cilantro and lime juice, season with salt.
3- Add mussels, cover and cook for 3-4 minutes
Serve with crusty bread for soaking up curry broth.
Chef’s Note: DO NOT use any mussels that appear damaged or dead…!
