This is a delicious halibut with olives and capers. This tangy sauce is the perfect foil to the meaty Halibut. This olive sauce is rather exotic and you will find it to be delicious.
1/4 cup Green Olives
1/4 cup Capers
1 tbsp Orange Juice
1 tsp Fresh Ginger, minced
1/2 tbsp Olive Oil
1. Combine olives, capers, ginger, and orange juice in a food processor and chop into a chunky paste.
2. Add some olive oil to an oven-safe pan or casserole dish. Place the halibut fillet in the pan, presentation side up. Pack the olive caper sauce on the top of the fillet evenly, about 1/4 inch thick.
3. Cook the fish in a 375 degree oven 8-10 minutes, until cooked through. Serve with a drizzle of extra virgin olive oil.
