During the holiday season, a lot of people consider the festivities as an opportunity to indulge in all kinds of food before reverting back to their diets come January. However, The Washington Post cited a study revealing that people actually double their calorie-intake after the holidays. “Despite New Year’s resolutions to eat healthier, people tend to hang on to those unhealthy holiday favorites and keep buying them in the New Year,” said Drew Hanks, one of the study’s authors.
These findings raised concerns mainly because of the high amount of calories already consumed over the holidays. Hence, there are now people who take a healthier route when it comes to Christmas feasts. Some have begun to prioritize fruits in their menus, which have been proven to promote mental health according to a study shared by Health IQ.
Of course, even holiday favorites can be made healthier, like a vegan-style Christmas pudding. The Express stated that the classic dish is already made with ingredients that are good for your health, such as the nausea-relieving ginger and potassium-rich sultanas. But aside from allowing vegans to enjoy the treat once again, this new version packs even more health content due to the additional and/or replaced ingredients.
Miss Kitchen Witch shared the recipe shared the recipe for this hearty addition to your holiday meals. It’s best to make it a few weeks before serving because of post-cooking procedures.
For The Pudding:
– 1 cup of Raisins
– 1 cup of Golden Raisins
– 1/2 cup of Cranberries
– 1/2 cup of diced dried Apricots
– 1 cup diced Prunes
– 3/4 cup of Brandy
– 1/4 cup of Ginger Liqueur
– 1 tablespoon of Cinnamon
– 1 tablespoon of Nutmeg
– 1 teaspoon of Ginger
– 1 teaspoon of Allspice
– 1 teaspoon of Cloves
– 1 grated, rind and juiced Lemon
– 1 grated, rind and juiced Orange
– 1 cup of Breadcrumbs
– 3/4 cup of Sugar
– 1/2 cup of unbleached, all-purpose Flour
– 1 tablespoon Flax meal
– 1 1/2 teaspoons of Baking Powder
– 1/2 teaspoons of Soda
– 1/2 cup cold Coconut Oil
– 1/4 cup of Soy Milk
– 1/4 cup of Molasses
For the Coating
– 2 tablespoons of Vegan Butter
– 2 tablespoons of Flour
– 2 cups of Cashew Cream
– 2 tablespoons of Powdered Sugar
– 1/4 cup of Brandy
For the Pudding:
1. Mix the alcohol, citrus, and spice altogether in one bowl and let your fruits soak in it for a couple of hours.
2. In another bowl, mix bread crumbs, sugar, flour, flax, baking powder, coconut oil, and baking soda.
3. Combine both mixtures and whisk in your cornstarch, soy milk, and molasses. Fold in the fruit as you whisk.
4. Grease up a mold or a bowl before pouring the mixture into it. Cover it with parchment paper and foil then secure it in place with a rubber band.
5. Let it steam for 5-7 hours in a stockpot steamer; make sure the steamer doesn’t dry up while it’s in there.
6. Once it’s done, let your pudding cool off a bit before removing it from the mold or bowl.
7. Pick it a few times with a toothpick and pour over some brandy to give it some punch. You will have to do this every other week up until the day you serve it.
8. Place your pudding inside an airtight tin and put it in your fridge for a few weeks. You’ll only put it out when you pour over some more brandy again.
9. Before serving it on Christmas day, place your pudding back into the mold or bowl and steam it for about an hour.
For The Coating:
Note that you can do this shortly before serving your pudding.
1. Create a thick paste by melting your vegan butter in a saucepan and mixing in your unbleached, all-purpose flour.
2. Stir it over medium heat for 1 minute then mix in your cashew cream.
3. Whisk it vigorously for about 5 minutes.
4. When you’ve produced a thick and smooth sauce, pinch in some sugar and salt and whisk it again until both have completely dissolved.
5. Turn down the heat and let it cook for about 5 minutes, all the while stirring occasionally.
6. Remove from the heat and stir in your brandy. Pour it all over your pudding then serve.
The holiday season may be about indulgence, but you don’t have to compromise your health in the process. This vegan version of a classic Christmas dish is one of many alternatives you can serve for a healthier but still appetizing holiday feast.
