Simple and healthy way to get some nutrition into your kids. Almonds provide Omega 3’s, chicken provides protein and yogurt is a great source of calcium. Very tasty too!
2 pounds chicken tenders
1 cup crushed almonds
2 tbs oil for frying
1/8 pinch salt and pepper
1 cup greek style yogurt
1 tablespoon Mustard (Dijon)
1 tbs local honey
1/2 cup egg whites
1. Dredge chicken in egg whites then dip in almonds to coat evenly.
2. In a skillet (non-stick works well)over medium heat add 2 tbs or so of pure olive oil. Add chicken and cook for 5 minutes per side (approximate) until cooked through. They will be firm to the touch when cooked.
3. Set chicken aside on a plate or platter.
4. Mix yogurt, mustard, and honey together to form the dipping sauce.
