On today’s show I discussed vegan carrot hotdogs….here is the recipe”
5 carrots, peeled, cut to be 1/2 inch longer then hot dog buns
5 hot dog buns, lightly toasted
1/4 c tamari soy sauce
1/2 tsp Knorr Aromat (found on amazon, does contain MSG)
1/4 tsp smoked paprika
4-5 drops liquid smoke
1/4 c apple cider vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp oil
1/2 tsp yellow mustard seed, crushed
1/2 tsp coriander seed, crushed
In zip bag mix all marinade ingredients, shake, let sit.
Bring 4 cups water to boil, add carrots, cook at teh boil 12 minutes, drain, move carrots to plate, allow to cool 15 minutes, then place in zip bag. Massage carrots to make sure they are touching marinade. Tuck zip bag into fridge in bowl in case of leaks.
Allow to marinate 12 hours, swish bag around several times during this period.
Bring out of fridge 30 minutes before using to allow to warm slightly.
Sear hot dogs buns to a golden brown, the pan fry or grill carrot dogs on all sides.
Serve “hotdog” as you normally would, my suggestions include:
-banana peppers, kraut, celery seeds, finely shredded cabbage, yellow mustard, ketchup
